Putting Appleby back on the cheese map


Established in November 2007, we made our first vat of hard cheese in May 2008 in a fully refurbished unit in the historic Westmorland market town of Appleby. We are situated very close to the old Creamery site that once produced some of the finest factory made cheddar in the country ~ a site at which we all spent many happy years.


The team comprises Bob Parmley, Alan Mandle and Maurice Walton ~ together we have over 70 years experience in the dairy industry. In undertaking this venture we have achieved a dream of owning and operating a small but very well equipped cheese production operation.
In addition to being a contract cheese manufacturer we have developed our own brands for sale in the area, we use milk from very local herds along with goats and ewes milk that are both sourced in Cumbria.

We are able to produce a maximum of 150Kg of hard cheese per batch and can store up to 3,000L of milk in a refrigerated storage tank. We are fully equipped to make a variety of soft cheeses including mould ripened types such as brie, camembert and coulomier. We have two 500L tipping vats, various sets of specialist multi moulds and a purpose built draining table and brine tank.
